Cupcakes for the Birthday Girl

November 15 - birthday of a wonderful friend and sister to me... tita thel... wanted to make her a cake - but can't decide if the round cake or cupcakes..... hmmm... finally after reading something somewhere - i decided on cupcakes instead and toyed with the idea of making toppers for her - nothing fancy - hehehe ... and at the same time practice my baking skills again :D

Anyways, bought some stuff and as soon as I arrived home from work, started to bake .. and was thinking of doing the toppers while waiting for the cupcakes to cool down. .. :D
I used Hershey's recipe for " "PERFECTLY CHOCOLATE" CHOCOLATE CAKE, tried and tested - I stick to this for chocolate cake recipes ... found here: http://www.hersheys.com/pure-recipes/184/HERSHEY .

My first batch of cupcakes 'domed' a bit becoz - I set the oven on the highest degree? hehehe got used to doing that for the muffins! :D... but still the cuppy cakes are nice and deli!!!

cupcake mania

I was in a cupcake craze dec. 31st and I made some batches of the all time favorites ng mga officemates ko - the nuttela frosted cupcakes, but i tried that confetti cupcakes that i saw on the net, and the deep dark chocolate cake, but i used the cupcake liners ( so i will not worry about the cutting and all!) and the corn muffins .

i made a dozen packages, and was a bit embarassed coz the others were asking for their box! i made the boxes for those with kidos, but i did make for the office to snack-on! unfortunately - the goodies didn't reach the other office (214) hahaha :) it was finished when it came to the accounts department (217) - the guys there took 2-3 pieces each.. one of each flavor hehehe... sorry to the guys in Unit 214 hehehe... nek tym - as we say!!

Nutella frosted cupcakes










following the recipes i found in the net and from some food bloggers who shared their "expertise" and "experience", i tried my hands on baking and guess what ?. . . my first trials were not bad at all!

"Try and try until you succeed" so they say and the result - lovely and delicious cupcakes!

I baked these batch - 5 dozens - believe that??? for my friend after she tasted my cupcakes. Their congregation had a potluck gathering and she decided to bring cupcakes instead.


The recipe I used (from bakingbites -formerly bakingsheet http://bakingbites.com/category/recipes/cupcakes/page/4/) follows below.
Nutella Frosted Cupcakes

10 tbsp(140 grams) butter, softened
3/4 cup white sugar
3 eggs
1/2 tsp vanilla
1 3/4 cups (200 grams) sifted all-purpose flour
1/4 tsp salt
2 tsp baking powder
Nutella, approx. 1/3 cup

Preheat oven to 325F. Line 12 muffin tins with paper liners.

Cream together butter and sugar until light, 2 minutes. Add in eggs one at a time, until fully incorporated. Don't worry if the batter doesn't look smooth. Add vanilla. Stir in flour, salt and baking powder until batter is uniform and no flour remains.

Using an ice cream scoop, fill each muffin liner with batter. They should be 3/4 full, if you're not using a scoop. Top each cake with 1 1/2 tsp Nutella. Swirl Nutella in with a toothpick, making sure to fold a bit of batter up over the nutella.

Bake for 20 minutes. Remove to a wire rack to cool completely.

Makes 12.
